Ingredients:

  • 2 lbs (900g) salmon fillet
  • 1/4 cup (60ml) olive oil
  • 1/4 cup (60ml) fresh lemon juice
  • 2 tablespoons (30ml) fresh dill, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon (5g) kosher salt
  • 1/2 teaspoon (2.5g) black pepper, freshly ground
  • 1 lemon, sliced into thin rounds (optional)

Instructions:

  1. In a small bowl, whisk together olive oil, lemon juice, chopped dill, minced garlic, salt, and pepper.
  2. Place the salmon fillet in a baking dish. Pour the marinade over the salmon, ensuring it is evenly coated. Let it marinate in the refrigerator for at least 30 minutes (or up to 2 hours) for enhanced flavor. This step is optional.
  3. Preheat oven to 400°F (200°C).
  4. If marinated, remove the salmon from the refrigerator. Arrange lemon slices (if using) on top of the salmon. Bake for 15-20 minutes, or until the salmon is cooked through and flakes easily with a fork. Internal temperature should reach 145°F (63°C).
  5. Remove the salmon from the oven and let it rest for a few minutes before serving. Garnish with fresh dill sprigs and additional lemon wedges.
