Ingredients:

  • 1 cup (227g) unsalted butter, softened
  • 1 cup (200g) granulated sugar
  • 1 cup (220g) packed light brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 cups (360g) all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup (227g) unsalted butter, softened
  • 1 1/2 cups (300g) powdered sugar
  • 1 cup (240g) creamy peanut butter
  • 1/4 cup (60ml) heavy cream
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • 6 ounces (170g) semi-sweet chocolate chips
  • 2 tablespoons (30ml) unsalted butter

Instructions:

  1. Line a 9x13 inch baking pan with parchment paper.
  2. Cream together butter, granulated sugar, and brown sugar. Beat in eggs and vanilla.
  3. Whisk together flour, baking soda, and salt. Add to wet ingredients and mix.
  4. Press the crust mixture into the prepared pan.
  5. Bake at 350°F (175°C) for 25-30 minutes. Cool completely.
  6. Cream together butter and powdered sugar. Add peanut butter, cream, vanilla, and salt. Beat until smooth.
  7. Spread the peanut butter filling over the cooled crust.
  8. Melt chocolate chips and butter until smooth.
  9. Pour melted chocolate over peanut butter filling and spread evenly.
  10. Refrigerate for at least 30 minutes.
  11. Cut into 16 squares and serve these lunch lady peanut butter bars.
