Ingredients:
- 1 cup (227g) unsalted butter, softened
- 1 cup (200g) granulated sugar
- 1 cup (220g) packed light brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 3 cups (360g) all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup (227g) unsalted butter, softened
- 1 1/2 cups (300g) powdered sugar
- 1 cup (240g) creamy peanut butter
- 1/4 cup (60ml) heavy cream
- 1 teaspoon vanilla extract
- Pinch of salt
- 6 ounces (170g) semi-sweet chocolate chips
- 2 tablespoons (30ml) unsalted butter
Instructions:
- Line a 9x13 inch baking pan with parchment paper.
- Cream together butter, granulated sugar, and brown sugar. Beat in eggs and vanilla.
- Whisk together flour, baking soda, and salt. Add to wet ingredients and mix.
- Press the crust mixture into the prepared pan.
- Bake at 350°F (175°C) for 25-30 minutes. Cool completely.
- Cream together butter and powdered sugar. Add peanut butter, cream, vanilla, and salt. Beat until smooth.
- Spread the peanut butter filling over the cooled crust.
- Melt chocolate chips and butter until smooth.
- Pour melted chocolate over peanut butter filling and spread evenly.
- Refrigerate for at least 30 minutes.
- Cut into 16 squares and serve these lunch lady peanut butter bars.
