- 1 lb spicy breakfast sausage (e.g., chorizo or pork sausage)
- 6 large eggs
- 1/4 cup milk
- 1 cup shredded sharp cheddar cheese
- 1/2 cup diced bell peppers (red and green)
- 1/2 cup diced onion
- Salt and pepper to taste
- 4 large flour tortillas (10-inch)
- Chopped fresh cilantro (optional, for garnish)
- Salsa or hot sauce (for serving)
Instructions:
- Heat a skillet over medium heat. Add the spicy sausage; cook until browned and cooked through, about 5-7 minutes. Remove from skillet and drain excess fat.
- In the same skillet, add diced onion and bell peppers. Sauté until they are tender and onions are translucent, about 4-5 minutes.
- In a mixing bowl, whisk together eggs, milk, salt, and pepper. Pour the egg mixture into the skillet and cook, stirring gently, until just set.
- Add the cooked sausage and cheese to the scrambled eggs. Stir to combine until cheese is melted.
- Lay a tortilla flat and place a generous portion of the filling in the center. Fold the sides over the filling, then roll from the bottom to secure. Repeat for all tortillas.
- In the skillet, place burritos seam-side down and cook on medium heat for 2-3 minutes per side, until golden brown.
