Ingredients:
- 1/4 cup (40g) chia seeds
- 1 cup (240ml) unsweetened almond milk
- 1 tbsp (15ml) maple syrup
- 1/2 tsp (2.5ml) vanilla extract
- 1 pinch (0.5g) sea salt
- 1/4 cup (60g) Greek yogurt
- 1/2 cup (75g) fresh berries
- 1/2 sliced (50g) banana
- 1 tbsp (15g) sliced almonds
Instructions:
- In a Mason jar, combine the chia seeds, almond milk, maple syrup, vanilla extract, and salt. Stir vigorously with a fork or whisk for about 60 seconds to ensure no dry seeds remain.
- Allow the jar to sit on the counter for 5 to 10 minutes to let the seeds begin to hydrate, then stir thoroughly a second time to break up any clusters.
- Seal the lid tightly and refrigerate for at least 4 hours, or preferably overnight.
- Before serving, give the pudding a final stir. Fold in the Greek yogurt and top with fresh berries, sliced banana, and sliced almonds.
