Ingredients:

  • 1.5 lbs (680g) Salmon fillets, skin on or off (about 4 fillets)
  • 2 Lemons, one thinly sliced, one juiced
  • 2 cloves Garlic, minced
  • 2 tablespoons Olive oil
  • 2 tablespoons Fresh dill, chopped
  • 1 tablespoon Fresh rosemary, chopped
  • 1 teaspoon Dried oregano
  • 1/2 teaspoon Salt (plus more to taste)
  • 1/4 teaspoon Black pepper (plus more to taste)
  • 1/4 cup Kalamata olives, pitted and halved (Optional)

Instructions:

  1. Preheat oven to 400°F (200°C). Line baking sheet with parchment paper.
  2. Pat salmon fillets dry with paper towels. Place them on the prepared baking sheet.
  3. In a small bowl, combine olive oil, minced garlic, lemon juice, dill, rosemary, oregano, salt, and pepper.
  4. Spoon the herb mixture evenly over the salmon fillets.
  5. Arrange lemon slices on top of each salmon fillet. Scatter olives (if using) around the salmon.
  6. Bake in the preheated oven for 15-20 minutes, or until the salmon is cooked through and flakes easily with a fork.
  7. Let rest for a couple of minutes before serving.
