Ingredients:
- 1.5 lbs (680g) Salmon fillets, skin on or off (about 4 fillets)
- 2 Lemons, one thinly sliced, one juiced
- 2 cloves Garlic, minced
- 2 tablespoons Olive oil
- 2 tablespoons Fresh dill, chopped
- 1 tablespoon Fresh rosemary, chopped
- 1 teaspoon Dried oregano
- 1/2 teaspoon Salt (plus more to taste)
- 1/4 teaspoon Black pepper (plus more to taste)
- 1/4 cup Kalamata olives, pitted and halved (Optional)
Instructions:
- Preheat oven to 400°F (200°C). Line baking sheet with parchment paper.
- Pat salmon fillets dry with paper towels. Place them on the prepared baking sheet.
- In a small bowl, combine olive oil, minced garlic, lemon juice, dill, rosemary, oregano, salt, and pepper.
- Spoon the herb mixture evenly over the salmon fillets.
- Arrange lemon slices on top of each salmon fillet. Scatter olives (if using) around the salmon.
- Bake in the preheated oven for 15-20 minutes, or until the salmon is cooked through and flakes easily with a fork.
- Let rest for a couple of minutes before serving.
