Ingredients:
- 1.5 cups (190g) all-purpose flour
- 1 tsp (5g) baking powder
- 0.5 tsp (3g) baking soda
- 1 tsp (2g) ground cinnamon
- 0.25 tsp (1.5g) sea salt
- 0.5 cup (115g) unsalted butter, softened
- 0.5 cup (100g) coconut sugar
- 1 large (50g) egg
- 1 tsp (5ml) vanilla extract
- 0.5 cup (120g) unsweetened applesauce
- 1 cup (150g) apple, finely diced and grated
- 0.5 cup (60g) powdered sugar
- 1 tbsp (15ml) maple syrup
- 1.5 tsp (7.5ml) milk
- 0.25 tsp (1ml) vanilla extract
Instructions:
- Preheat oven to 350°F (175°C). Generously grease the mini bundt pan with baking spray or softened butter and dust with flour, tapping out the excess.
- Beat the softened butter and coconut sugar until the mixture is pale and fluffy.
- Whisk in the room-temperature egg and vanilla extract until the batter is smooth and emulsified.
- Sift together the flour, baking powder, baking soda, cinnamon, and salt.
- Gradually stir the dry ingredients into the wet base, alternating with the unsweetened applesauce.
- Gently fold in the diced and grated apples using a spatula.
- Scoop approximately 2 tablespoons of batter into each cavity, filling them about 3/4 full.
- Bake for 20-22 minutes or until a toothpick inserted into the center comes out clean.
- Let the cakes cool in the pan for 10 minutes before carefully inverting them.
- Whisk together powdered sugar, maple syrup, milk, and vanilla extract to create a glaze, and drizzle over the cooled cakes.
