Ingredients:

  • 1/2 cup (115g) unsalted butter, melted
  • 1 cup (200g) granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/3 cup (40g) unsweetened cocoa powder
  • 1/2 cup (65g) all-purpose flour
  • 1/4 teaspoon salt
  • 1/4 teaspoon baking powder
  • 1/2 cup (90g) mint chocolate chips
  • 1/2 cup (115g) unsalted butter, softened (optional for frosting)
  • 1 3/4 cups (220g) powdered sugar (optional for frosting)
  • 1 teaspoon peppermint extract (optional for frosting)
  • Green food coloring (optional for frosting)
  • Additional mint chocolate chips for garnish

Instructions:

  1. Preheat the oven to 350°F (175°C).
  2. Grease or line the baking pan with parchment paper.
  3. In a mixing bowl, combine melted butter and sugar; whisk until smooth.
  4. Add eggs, one at a time, mixing well after each addition; stir in vanilla extract.
  5. In another bowl, whisk together cocoa powder, flour, salt, and baking powder.
  6. Gradually fold dry ingredients into the wet mixture until combined; do not overmix.
  7. Gently fold in mint chocolate chips.
  8. Pour the batter into the prepared baking pan; spread evenly.
  9. Bake in the preheated oven for 25-30 minutes, until a toothpick inserted in the center comes out with a few moist crumbs.
  10. Allow brownies to cool completely in the pan.
  11. (Optional) Prepare mint frosting while brownies cool: Beat butter, powdered sugar, peppermint extract, and food coloring until smooth.
  12. Once brownies are cool, frost them (if desired) and sprinkle with extra mint chocolate chips.
  13. Cut into squares and serve.
