Ingredients:
- 1/2 cup (115g) unsalted butter, melted
- 1 cup (200g) granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/3 cup (40g) unsweetened cocoa powder
- 1/2 cup (65g) all-purpose flour
- 1/4 teaspoon salt
- 1/4 teaspoon baking powder
- 1/2 cup (90g) mint chocolate chips
- 1/2 cup (115g) unsalted butter, softened (optional for frosting)
- 1 3/4 cups (220g) powdered sugar (optional for frosting)
- 1 teaspoon peppermint extract (optional for frosting)
- Green food coloring (optional for frosting)
- Additional mint chocolate chips for garnish
Instructions:
- Preheat the oven to 350°F (175°C).
- Grease or line the baking pan with parchment paper.
- In a mixing bowl, combine melted butter and sugar; whisk until smooth.
- Add eggs, one at a time, mixing well after each addition; stir in vanilla extract.
- In another bowl, whisk together cocoa powder, flour, salt, and baking powder.
- Gradually fold dry ingredients into the wet mixture until combined; do not overmix.
- Gently fold in mint chocolate chips.
- Pour the batter into the prepared baking pan; spread evenly.
- Bake in the preheated oven for 25-30 minutes, until a toothpick inserted in the center comes out with a few moist crumbs.
- Allow brownies to cool completely in the pan.
- (Optional) Prepare mint frosting while brownies cool: Beat butter, powdered sugar, peppermint extract, and food coloring until smooth.
- Once brownies are cool, frost them (if desired) and sprinkle with extra mint chocolate chips.
- Cut into squares and serve.
