Ingredients:
- 1 cup (150g) mixed berries
- 1 cup (240ml) unsweetened almond milk
- 2 tbsp (30ml) maple syrup
- 1 tsp (5ml) pure vanilla extract
- 1 pinch sea salt
- 1/4 cup (40g) chia seeds
- 1/4 cup (60g) plain Greek yogurt
Instructions:
- Place the mixed berries, almond milk, maple syrup, vanilla, salt, and Greek yogurt into a blender. Process until the mixture is completely smooth and uniform in color.
- Divide the blended berry mixture evenly between two 8-oz mason jars.
- Pour 2 tablespoons of chia seeds into each jar and stir vigorously with a fork or whisk until the seeds are fully submerged.
- Let the jars sit on the counter for 5-10 minutes, then stir one more time to break up any settled clumps.
- Seal the lids tightly and refrigerate for at least 4 hours, or overnight, until the pudding has set to a velvety texture.
