Ingredients:
- 1 cup (240 ml) unsalted butter, melted
- 1 cup (200 g) granulated sugar
- 2 large eggs
- 2 cups (240 g) King Arthur All-Purpose Flour
- 1 teaspoon (5 g) baking soda
- 1/2 teaspoon (3 g) salt
- 1 teaspoon (5 ml) vanilla extract
- 2 large overripe bananas, mashed (about 1 cup or 240 g)
- 1/2 teaspoon (2 g) ground cinnamon (optional)
- 1/2 cup (75 g) chopped walnuts or pecans (optional)
- 1/3 cup (60 g) chocolate chips (optional)
Instructions:
- Preheat the oven to 350°F (175°C) and grease the loaf pan or line it with parchment paper.
- In a mixing bowl, whisk together the melted butter and sugar until well combined. Add the eggs, one at a time, mixing well after each addition. Stir in the mashed bananas and vanilla extract until incorporated.
- In a separate bowl, whisk together the King Arthur Flour, baking soda, salt, and optional cinnamon.
- Gradually fold the dry mixture into the wet mixture using a rubber spatula until just combined. Do not overmix; a few lumps are okay.
- If using, fold in the nuts or chocolate chips until evenly distributed.
- Pour the batter into the prepared loaf pan and smooth the top. Bake for 55-65 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the banana bread to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
