Ingredients:

  • 1 cup (240 ml) unsalted butter, melted
  • 1 cup (200 g) granulated sugar
  • 2 large eggs
  • 2 cups (240 g) King Arthur All-Purpose Flour
  • 1 teaspoon (5 g) baking soda
  • 1/2 teaspoon (3 g) salt
  • 1 teaspoon (5 ml) vanilla extract
  • 2 large overripe bananas, mashed (about 1 cup or 240 g)
  • 1/2 teaspoon (2 g) ground cinnamon (optional)
  • 1/2 cup (75 g) chopped walnuts or pecans (optional)
  • 1/3 cup (60 g) chocolate chips (optional)

Instructions:

  1. Preheat the oven to 350°F (175°C) and grease the loaf pan or line it with parchment paper.
  2. In a mixing bowl, whisk together the melted butter and sugar until well combined. Add the eggs, one at a time, mixing well after each addition. Stir in the mashed bananas and vanilla extract until incorporated.
  3. In a separate bowl, whisk together the King Arthur Flour, baking soda, salt, and optional cinnamon.
  4. Gradually fold the dry mixture into the wet mixture using a rubber spatula until just combined. Do not overmix; a few lumps are okay.
  5. If using, fold in the nuts or chocolate chips until evenly distributed.
  6. Pour the batter into the prepared loaf pan and smooth the top. Bake for 55-65 minutes, or until a toothpick inserted into the center comes out clean.
  7. Allow the banana bread to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
