Ingredients:

  • 3 ripe bananas (about 1.5 cups mashed or 375 grams)
  • 1/3 cup (75 grams) unsalted butter, melted
  • 1 teaspoon (5 ml) vanilla extract
  • 1 large egg, beaten
  • 1 teaspoon (6 grams) baking soda
  • Pinch of salt
  • 3/4 cup (150 grams) granulated sugar
  • 1 cup (125 grams) all-purpose flour
  • Optional: 1/2 cup (75 grams) chopped walnuts or pecans
  • Optional: 1/2 cup (90 grams) chocolate chips

Instructions:

  1. Preheat your oven to 350°F (175°C).
  2. Grease the loaf pan or line with parchment paper for easy removal.
  3. In a mixing bowl, mash the ripe bananas until smooth.
  4. Stir in the melted butter, vanilla extract, and beaten egg into the mashed bananas.
  5. In another bowl, combine flour, baking soda, and salt.
  6. Gradually add the dry mixture to the wet mixture, stirring until just combined.
  7. Mix in the granulated sugar and any optional add-ins (nuts or chocolate chips).
  8. Transfer the batter to the prepared loaf pan.
  9. Bake in the preheated oven for about 60 minutes or until a toothpick inserted in the center comes out clean.
  10. Let the bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
