Ingredients:
- 2 ½ cups (310g) all-purpose flour
- 1 ½ cups (300g) granulated sugar
- 2 ½ tsp (12g) baking powder
- ½ tsp (3g) fine sea salt
- 3 large (150g) eggs, room temperature
- 1 cup (240ml) whole milk, room temperature
- ½ cup (110g) unsalted butter, melted and cooled
- ¼ cup (60ml) vegetable oil
- 1 tbsp (15ml) pure vanilla extract
Instructions:
- Preheat the oven to 350°F (175°C). Grease an 8-inch or 9-inch round cake pan with butter and line the bottom with a circle of parchment paper.
- In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and fine sea salt.
- In a separate bowl, beat the room temperature eggs, whole milk, melted butter, vegetable oil, and pure vanilla extract on medium speed for approximately 2 minutes until the mixture is pale yellow, glossy, and incorporates air.
- Pour the beaten wet ingredients into the dry ingredients and whisk gently until just combined and smooth, taking care not to over-mix the flour.
- Pour the batter into the prepared cake pan and smooth the top with a spatula.
- Bake for 30-35 minutes, or until the edges slightly pull away from the pan and a toothpick inserted into the center comes out clean or with a few moist crumbs.
- Allow the cake to cool in the pan for 10 minutes before transferring it to a wire cooling rack.
