Ingredients:

  • 2 ½ cups (310g) all-purpose flour
  • 1 ½ cups (300g) granulated sugar
  • 2 ½ tsp (12g) baking powder
  • ½ tsp (3g) fine sea salt
  • 3 large (150g) eggs, room temperature
  • 1 cup (240ml) whole milk, room temperature
  • ½ cup (110g) unsalted butter, melted and cooled
  • ¼ cup (60ml) vegetable oil
  • 1 tbsp (15ml) pure vanilla extract

Instructions:

  1. Preheat the oven to 350°F (175°C). Grease an 8-inch or 9-inch round cake pan with butter and line the bottom with a circle of parchment paper.
  2. In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and fine sea salt.
  3. In a separate bowl, beat the room temperature eggs, whole milk, melted butter, vegetable oil, and pure vanilla extract on medium speed for approximately 2 minutes until the mixture is pale yellow, glossy, and incorporates air.
  4. Pour the beaten wet ingredients into the dry ingredients and whisk gently until just combined and smooth, taking care not to over-mix the flour.
  5. Pour the batter into the prepared cake pan and smooth the top with a spatula.
  6. Bake for 30-35 minutes, or until the edges slightly pull away from the pan and a toothpick inserted into the center comes out clean or with a few moist crumbs.
  7. Allow the cake to cool in the pan for 10 minutes before transferring it to a wire cooling rack.
