Ingredients:
- 1/2 cup (113g) unsalted butter, softened
- 3/4 cup (150g) packed light brown sugar
- 1/3 cup (80ml) unsulphured molasses
- 1 large egg (50g)
- 2 tsp (10ml) vanilla extract
- 2 1/4 cups (280g) all-purpose flour
- 2 tsp (10g) ground ginger
- 1 tsp (5g) ground cinnamon
- 1/2 tsp (2g) ground cloves
- 1 tsp (5g) baking soda
- 1/4 tsp (1.5g) salt
- 1/2 cup (60g) powdered sugar, sifted
Instructions:
- Beat the softened butter and brown sugar on medium-high until the mixture is pale and fluffy.
- Slowly stream in the molasses, then add the egg and vanilla, beating until the batter is glossy and completely smooth.
- In a separate bowl, whisk together the flour, ginger, cinnamon, cloves, baking soda, and salt.
- Gradually add the dry ingredients to the wet mixture on low speed, mixing only until the last streaks of flour disappear to avoid overworking the gluten.
- Transfer the dough to a bowl, cover with plastic wrap, and refrigerate for at least 2 hours to firm the butter and hydrate the flour.
- Preheat oven and prepare baking sheets with parchment paper or silicone mats.
- Scoop the chilled dough into 1.5 tbsp sized balls and roll each ball heavily in sifted powdered sugar.
- Bake for 12 minutes until the cookies have expanded and developed a cracked surface, then transfer to a wire cooling rack.
