Ingredients:
- 1 pint (300g) cherry tomatoes
- 8 oz (225g) mini mozzarella pearls
- 1 bunch (20g) fresh basil leaves
- 1/4 cup (60ml) balsamic glaze
- 1 tbsp (15ml) extra virgin olive oil
- 1/2 tsp (3g) flaky sea salt
- 1/4 tsp (1g) freshly cracked black pepper
Instructions:
- Remove all moisture from the mozzarella pearls using paper towels to prevent the appetizer from becoming soggy. Halve the cherry tomatoes lengthwise.
- Assemble the bites by inserting a skewer through the flat side of a tomato half, followed by a folded fresh basil leaf, then a mozzarella pearl, and finishing with a second tomato half to cap the bite.
- Arrange the skewers on a platter and lightly drizzle with extra virgin olive oil.
- Sprinkle evenly with flaky sea salt and cracked black pepper, then finish by zig-zagging the balsamic glaze across the platter.
