  • 1/4 cup unsalted butter, softened
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 1/4 cup rainbow sprinkles (for topping)

Instructions:

  1. In a large mixing bowl, combine the graham cracker crumbs, shredded coconut (if using), rainbow sprinkles, and brown sugar.
  2. Pour in the melted butter and vanilla extract. Mix until everything is well combined and resembles wet sand.
  3. Press the mixture firmly into an even layer in a greased or parchment-lined 9x9-inch baking dish.
  4. In another bowl, beat together the softened cream cheese and butter until smooth and creamy.
  5. Gradually add in powdered sugar while continuing to mix until fully incorporated.
  6. Stir in vanilla extract.
  7. Spread the frosting evenly over the pressed base layer in your baking dish.
  8. Sprinkle additional rainbow sprinkles on top of the frosting for that festive touch!
  9. Cover with plastic wrap or foil and refrigerate for at least one hour to set.
  10. Once chilled, cut into squares or bars using a sharp knife.
  11. Serve immediately or store leftovers in an airtight container in the refrigerator for up to one week.
