- 2 cups graham cracker crumbs

- 1/4 cup unsalted butter, softened
- 2 cups powdered sugar
- 1 teaspoon vanilla extract
- 1/4 cup rainbow sprinkles (for topping)
Instructions:
- In a large mixing bowl, combine the graham cracker crumbs, shredded coconut (if using), rainbow sprinkles, and brown sugar.
- Pour in the melted butter and vanilla extract. Mix until everything is well combined and resembles wet sand.
- Press the mixture firmly into an even layer in a greased or parchment-lined 9x9-inch baking dish.
- In another bowl, beat together the softened cream cheese and butter until smooth and creamy.
- Gradually add in powdered sugar while continuing to mix until fully incorporated.
- Stir in vanilla extract.
- Spread the frosting evenly over the pressed base layer in your baking dish.
- Sprinkle additional rainbow sprinkles on top of the frosting for that festive touch!
- Cover with plastic wrap or foil and refrigerate for at least one hour to set.
- Once chilled, cut into squares or bars using a sharp knife.
- Serve immediately or store leftovers in an airtight container in the refrigerator for up to one week.
