Ingredients:
- 6 ounces (170g) semi-sweet chocolate chips
- 1 tablespoon (15ml) butter (unsalted)
- 5 ounces (140g) dry chow mein noodles
- 1 cup mini candy eggs (such as Cadbury Mini Eggs or similar), or jelly beans
- Optional: Sprinkles for extra festivity!
Instructions:
- Combine chocolate chips and butter in a microwave-safe bowl. Microwave in 30-second intervals, stirring after each interval, until completely melted and smooth.
- Add the chow mein noodles to the melted chocolate. Gently toss to coat all noodles evenly.
- Drop spoonfuls of the chocolate-covered noodle mixture onto the prepared baking sheet. Use your fingers or the back of a spoon to create a small well in the center of each cookie to resemble a nest.
- While the chocolate is still soft, gently press 3-4 mini candy eggs into the center of each nest. Sprinkle with sprinkles if desired.
- Place the baking sheet in the refrigerator for at least 30 minutes, or until the chocolate is completely set.
- Once set, carefully remove the cookies from the baking sheet and serve.
