Ingredients:

  • 6 ounces (170g) semi-sweet chocolate chips
  • 1 tablespoon (15ml) butter (unsalted)
  • 5 ounces (140g) dry chow mein noodles
  • 1 cup mini candy eggs (such as Cadbury Mini Eggs or similar), or jelly beans
  • Optional: Sprinkles for extra festivity!

Instructions:

  1. Combine chocolate chips and butter in a microwave-safe bowl. Microwave in 30-second intervals, stirring after each interval, until completely melted and smooth.
  2. Add the chow mein noodles to the melted chocolate. Gently toss to coat all noodles evenly.
  3. Drop spoonfuls of the chocolate-covered noodle mixture onto the prepared baking sheet. Use your fingers or the back of a spoon to create a small well in the center of each cookie to resemble a nest.
  4. While the chocolate is still soft, gently press 3-4 mini candy eggs into the center of each nest. Sprinkle with sprinkles if desired.
  5. Place the baking sheet in the refrigerator for at least 30 minutes, or until the chocolate is completely set.
  6. Once set, carefully remove the cookies from the baking sheet and serve.
