Ingredients:

  • 1 cup (90g) rolled oats (not instant), plus extra for rolling
  • ½ cup (120g) creamy peanut butter (natural or processed)
  • ⅓ cup (113g) honey
  • ¼ cup (30g) ground flaxseed
  • 2 tablespoons (30ml) chia seeds
  • 1 teaspoon (5ml) vanilla extract
  • ¼ cup (40g) chocolate chips (dark, milk, or white)
  • Optional: ¼ cup (30g) shredded coconut, for rolling

Instructions:

  1. In a large bowl, combine the peanut butter, honey, and vanilla extract. Stir until well combined.
  2. Add the rolled oats, flaxseed, and chia seeds to the wet ingredients. Mix until everything is evenly distributed.
  3. Gently fold in the chocolate chips.
  4. Cover the bowl and refrigerate the mixture for at least 30 minutes.
  5. Using your hands, roll the mixture into 1-inch balls.
  6. Roll the balls in extra rolled oats or shredded coconut, if desired.
  7. Place the finished balls on a baking sheet lined with parchment paper. Refrigerate for at least 15 minutes. Store in an airtight container in the refrigerator for up to a week.
