Ingredients:
- 1 cup (90g) rolled oats (not instant), plus extra for rolling
- ½ cup (120g) creamy peanut butter (natural or processed)
- ⅓ cup (113g) honey
- ¼ cup (30g) ground flaxseed
- 2 tablespoons (30ml) chia seeds
- 1 teaspoon (5ml) vanilla extract
- ¼ cup (40g) chocolate chips (dark, milk, or white)
- Optional: ¼ cup (30g) shredded coconut, for rolling
Instructions:
- In a large bowl, combine the peanut butter, honey, and vanilla extract. Stir until well combined.
- Add the rolled oats, flaxseed, and chia seeds to the wet ingredients. Mix until everything is evenly distributed.
- Gently fold in the chocolate chips.
- Cover the bowl and refrigerate the mixture for at least 30 minutes.
- Using your hands, roll the mixture into 1-inch balls.
- Roll the balls in extra rolled oats or shredded coconut, if desired.
- Place the finished balls on a baking sheet lined with parchment paper. Refrigerate for at least 15 minutes. Store in an airtight container in the refrigerator for up to a week.
