Ingredients:
- 1 cup (90g) rolled oats (old-fashioned oats, not instant)
- ½ cup (50g) unsweetened shredded coconut
- ½ cup (60g) mini chocolate chips
- ¼ cup (30g) ground flaxseed meal (optional)
- ½ cup (125ml) creamy peanut butter (all-natural, no sugar added preferred)
- ⅓ cup (80ml) honey
- 1 teaspoon (5ml) vanilla extract
- Extra shredded coconut, chocolate sprinkles, or chopped nuts (optional coating)
Instructions:
- In a large mixing bowl, combine the rolled oats, shredded coconut, chocolate chips, and flaxseed meal (if using).
- Add the peanut butter, honey, and vanilla extract to the dry ingredients.
- Stir until all ingredients are well combined and a sticky dough forms.
- Using a cookie scoop or a spoon, scoop out small portions of the mixture and roll them into 1-inch (2.5 cm) balls.
- Roll the balls in the extra shredded coconut, chocolate sprinkles, or chopped nuts, if desired.
- Place the energy balls on a baking sheet or plate and chill in the refrigerator for at least 30 minutes to firm up (optional).
