Ingredients:

  • 1 cup (90g) rolled oats (old-fashioned oats, not instant)
  • ½ cup (50g) unsweetened shredded coconut
  • ½ cup (60g) mini chocolate chips
  • ¼ cup (30g) ground flaxseed meal (optional)
  • ½ cup (125ml) creamy peanut butter (all-natural, no sugar added preferred)
  • ⅓ cup (80ml) honey
  • 1 teaspoon (5ml) vanilla extract
  • Extra shredded coconut, chocolate sprinkles, or chopped nuts (optional coating)

Instructions:

  1. In a large mixing bowl, combine the rolled oats, shredded coconut, chocolate chips, and flaxseed meal (if using).
  2. Add the peanut butter, honey, and vanilla extract to the dry ingredients.
  3. Stir until all ingredients are well combined and a sticky dough forms.
  4. Using a cookie scoop or a spoon, scoop out small portions of the mixture and roll them into 1-inch (2.5 cm) balls.
  5. Roll the balls in the extra shredded coconut, chocolate sprinkles, or chopped nuts, if desired.
  6. Place the energy balls on a baking sheet or plate and chill in the refrigerator for at least 30 minutes to firm up (optional).
