Ingredients:
- 1 ½ cups (190g) all-purpose flour
- ½ cup (100g) granulated sugar
- 2 tsp baking powder
- ½ tsp baking soda
- ¼ tsp salt
- 1/3 cup (80ml) vegetable oil
- 2 large eggs
- 1 tsp vanilla extract
- ½ cup (120ml) whole milk
- ½ cup (150g) Nutella
- 3 tbsp (39g) granulated sugar (for topping)
- 1 tsp ground cinnamon
- 1 tbsp (15g) unsalted butter, melted
Instructions:
- Preheat the oven to 350°F (175°C). Grease or line a muffin tin with paper liners.
- In a large bowl, whisk together flour, granulated sugar, baking powder, baking soda, and salt.
- In a separate bowl, mix together vegetable oil, eggs, vanilla extract, and milk until combined.
- Pour the wet ingredients into the dry ingredients. Stir gently until just combined, being careful not to overmix.
- Drop spoonfuls of Nutella into the batter. Using a rubber spatula, gently fold the Nutella into the batter to create swirls.
- Spoon the batter into the muffin tin, filling each cup about 2/3 full.
- In a small bowl, mix together granulated sugar and cinnamon. Brush the tops of the muffins with melted butter and sprinkle generously with the cinnamon sugar mixture.
- Place in the oven and bake for 18-20 minutes, or until a toothpick comes out clean and tops are golden.
- Allow muffins to cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
