Ingredients:

  • 1 ½ cups (190g) all-purpose flour
  • ½ cup (100g) granulated sugar
  • 2 tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • 1/3 cup (80ml) vegetable oil
  • 2 large eggs
  • 1 tsp vanilla extract
  • ½ cup (120ml) whole milk
  • ½ cup (150g) Nutella
  • 3 tbsp (39g) granulated sugar (for topping)
  • 1 tsp ground cinnamon
  • 1 tbsp (15g) unsalted butter, melted

Instructions:

  1. Preheat the oven to 350°F (175°C). Grease or line a muffin tin with paper liners.
  2. In a large bowl, whisk together flour, granulated sugar, baking powder, baking soda, and salt.
  3. In a separate bowl, mix together vegetable oil, eggs, vanilla extract, and milk until combined.
  4. Pour the wet ingredients into the dry ingredients. Stir gently until just combined, being careful not to overmix.
  5. Drop spoonfuls of Nutella into the batter. Using a rubber spatula, gently fold the Nutella into the batter to create swirls.
  6. Spoon the batter into the muffin tin, filling each cup about 2/3 full.
  7. In a small bowl, mix together granulated sugar and cinnamon. Brush the tops of the muffins with melted butter and sprinkle generously with the cinnamon sugar mixture.
  8. Place in the oven and bake for 18-20 minutes, or until a toothpick comes out clean and tops are golden.
  9. Allow muffins to cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
