Ingredients:

  • 1/2 cup (113g / 4 oz) unsalted butter, softened
  • 3/4 cup (150g / 5.3 oz) granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups (approximately 3 large) mashed ripe bananas (about 340g / 12 oz)
  • 1/4 cup (60ml / 2 fl oz) milk
  • 1 1/2 cups (192g / 6.8 oz) all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg (optional)
  • 1/4 teaspoon salt
  • 1 cup (90g / 3.2 oz) rolled oats, plus extra for topping

Instructions:

  1. Preheat oven to 350°F (175°C). Grease and flour the loaf pan (or line with parchment paper).
  2. In a large bowl, cream together the softened butter and sugar until light and fluffy.
  3. Beat in the eggs one at a time, then stir in the vanilla extract.
  4. In a separate bowl, mash the bananas with a fork until mostly smooth. Stir in the milk.
  5. In another bowl, whisk together the flour, baking soda, cinnamon, nutmeg (if using), salt, and rolled oats.
  6. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix!
  7. Pour the batter into the prepared loaf pan, spreading evenly. Sprinkle extra oats on top (optional).
  8. Bake for 50-60 minutes, or until a wooden skewer inserted into the center comes out clean or with a few moist crumbs. Check at 50 minutes - every oven is different, innit?
  9. Let the bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely. Enjoy your Oatmeal Banana Bread!
