Ingredients:
- 1/2 cup (113g / 4 oz) unsalted butter, softened
- 3/4 cup (150g / 5.3 oz) granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 1/2 cups (approximately 3 large) mashed ripe bananas (about 340g / 12 oz)
- 1/4 cup (60ml / 2 fl oz) milk
- 1 1/2 cups (192g / 6.8 oz) all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg (optional)
- 1/4 teaspoon salt
- 1 cup (90g / 3.2 oz) rolled oats, plus extra for topping
Instructions:
- Preheat oven to 350°F (175°C). Grease and flour the loaf pan (or line with parchment paper).
- In a large bowl, cream together the softened butter and sugar until light and fluffy.
- Beat in the eggs one at a time, then stir in the vanilla extract.
- In a separate bowl, mash the bananas with a fork until mostly smooth. Stir in the milk.
- In another bowl, whisk together the flour, baking soda, cinnamon, nutmeg (if using), salt, and rolled oats.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix!
- Pour the batter into the prepared loaf pan, spreading evenly. Sprinkle extra oats on top (optional).
- Bake for 50-60 minutes, or until a wooden skewer inserted into the center comes out clean or with a few moist crumbs. Check at 50 minutes - every oven is different, innit?
- Let the bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely. Enjoy your Oatmeal Banana Bread!
