Ingredients:

  • 1 cup (150g) pitted Medjool dates
  • 1/2 cup (120ml) water
  • 1 tbsp (15ml) lemon juice
  • 1 tbsp (12g) brown sugar
  • 1 tsp (5ml) vanilla extract
  • 1 cup (225g) unsalted butter, softened
  • 3/4 cup (150g) light brown sugar, packed
  • 1 large egg
  • 1 tsp (5ml) vanilla extract
  • 1 1/2 cups (190g) all-purpose flour
  • 1 tsp (5g) baking soda
  • 1 tsp (2g) ground cinnamon
  • 1/2 tsp (3g) salt
  • 3 cups (270g) old fashioned oatmeal

Instructions:

  1. Place pitted dates, water, lemon juice, and brown sugar in a small saucepan over medium heat.
  2. Cook for 10-15 minutes, stirring occasionally, until dates are tender and liquid has reduced.
  3. Remove from heat, stir in vanilla, and puree with a potato masher until a thick, jam-like paste forms; set aside to cool.
  4. Beat softened butter and brown sugar together until pale and fluffy.
  5. Mix in the egg and vanilla extract until smooth.
  6. In a separate bowl, whisk together flour, baking soda, cinnamon, and salt.
  7. Slowly add the dry ingredients to the wet mixture, stirring until just combined.
  8. Gently fold in the old fashioned oatmeal until fully coated.
  9. Form dough into 1-inch balls and place 2 inches apart on a parchment-lined baking sheet.
  10. Use a thumb or small spoon to create a deep well in the center of each ball.
  11. Spoon approximately 1 teaspoon of the cooled date smash into the center of each cookie.
  12. Bake at 350°F (175°C) for 10-12 minutes, or until edges are deep golden brown.
  13. Allow to set on the pan for 5 minutes before transferring to a wire rack to cool completely.
