Ingredients:
- 2 cups (250g) all-purpose flour
- 1 tsp (5g) baking soda
- 1 tsp (5g) baking powder
- ½ tsp (3g) salt
- 1 tsp (2g) ground cinnamon
- ¾ cup (175ml) extra-virgin olive oil
- 1 cup (200g) granulated sugar
- 2 large (100g) eggs
- ½ cup (120g) plain Greek yogurt
- 1 tsp (5ml) vanilla extract
- 1 tbsp (6g) lemon zest
- 2 cups (250g) grated zucchini
Instructions:
- Preheat oven to 350°F (175°C). Grease a 9x5 inch loaf pan with olive oil or line with parchment paper.
- Grate the zucchini and use a clean kitchen towel to gently press out excess moisture until damp.
- In a large bowl, combine olive oil, sugar, eggs, Greek yogurt, vanilla extract, and lemon zest. Stir until smooth.
- Fold the grated zucchini into the wet mixture until evenly distributed.
- In a separate medium bowl, whisk together flour, baking soda, baking powder, salt, and cinnamon.
- Gradually add dry ingredients to the wet mixture and stir gently until just combined; do not overmix.
- Pour batter into the prepared pan and bake for 55–65 minutes, or until a toothpick inserted into the center comes out clean.
- Cool in the pan for 10 minutes before transferring to a wire rack.
