Ingredients:

  • 4 boneless, skinless chicken breasts (about 6 oz / 170g each)
  • 1/2 cup (60g) all-purpose flour, seasoned with salt and pepper
  • 2 large eggs, beaten
  • 1 cup (100g) plain breadcrumbs
  • 1/2 cup (50g) grated Parmesan cheese
  • 1 teaspoon dried Italian herbs
  • 1/4 cup (60ml) olive oil
  • 2 cups (470ml) marinara sauce (store-bought or homemade)
  • 8 oz (225g) fresh mozzarella cheese, sliced
  • 1/4 cup (25g) grated Parmesan cheese, for topping
  • Fresh basil leaves, for garnish (optional)

Instructions:

  1. Flatten chicken breasts to even thickness using a meat mallet or rolling pin (optional). Season with salt and pepper.
  2. Set up a breading station with flour, beaten eggs, and breadcrumb mixture (breadcrumbs, Parmesan cheese, Italian herbs).
  3. Dredge each chicken breast in flour, then dip in egg, and finally coat thoroughly with breadcrumb mixture.
  4. Heat olive oil in a large skillet over medium-high heat. Sear the breaded chicken breasts for 2-3 minutes per side, until lightly golden brown.
  5. Spread a thin layer of marinara sauce in a baking dish. Place the seared chicken breasts on top of the sauce.
  6. Top each chicken breast with marinara sauce, then arrange mozzarella slices on top. Sprinkle with Parmesan cheese.
  7. Bake in a preheated oven (375°F / 190°C) for 20-25 minutes, or until chicken is cooked through (internal temperature reaches 165°F / 74°C) and cheese is melted and bubbly.
  8. Garnish with fresh basil leaves (optional) and serve immediately.
