Ingredients:
- 4 boneless, skinless chicken breasts (about 6 oz / 170g each)
- 1/2 cup (60g) all-purpose flour, seasoned with salt and pepper
- 2 large eggs, beaten
- 1 cup (100g) plain breadcrumbs
- 1/2 cup (50g) grated Parmesan cheese
- 1 teaspoon dried Italian herbs
- 1/4 cup (60ml) olive oil
- 2 cups (470ml) marinara sauce (store-bought or homemade)
- 8 oz (225g) fresh mozzarella cheese, sliced
- 1/4 cup (25g) grated Parmesan cheese, for topping
- Fresh basil leaves, for garnish (optional)
Instructions:
- Flatten chicken breasts to even thickness using a meat mallet or rolling pin (optional). Season with salt and pepper.
- Set up a breading station with flour, beaten eggs, and breadcrumb mixture (breadcrumbs, Parmesan cheese, Italian herbs).
- Dredge each chicken breast in flour, then dip in egg, and finally coat thoroughly with breadcrumb mixture.
- Heat olive oil in a large skillet over medium-high heat. Sear the breaded chicken breasts for 2-3 minutes per side, until lightly golden brown.
- Spread a thin layer of marinara sauce in a baking dish. Place the seared chicken breasts on top of the sauce.
- Top each chicken breast with marinara sauce, then arrange mozzarella slices on top. Sprinkle with Parmesan cheese.
- Bake in a preheated oven (375°F / 190°C) for 20-25 minutes, or until chicken is cooked through (internal temperature reaches 165°F / 74°C) and cheese is melted and bubbly.
- Garnish with fresh basil leaves (optional) and serve immediately.
