  • ½ tsp black pepper
  • 1 tsp garlic powder
  • ¼ cup grated Parmesan cheese

Instructions:

  1. Preheat your oven to 425°F (220°C). Place the rimmed baking sheet inside the oven while it preheats to ensure the zucchini sears immediately upon contact.
  2. In a large mixing bowl, combine the zucchini slices, olive oil, salt, pepper, and garlic powder. Toss thoroughly until every slice is glossy and evenly coated.
  3. Carefully remove the hot baking sheet from the oven. Spread the zucchini in a single layer, ensuring they aren't touching, and roast for 12-15 minutes.
  4. Remove the pan and sprinkle the grated Parmesan evenly over the slices. Turn the oven to the Broil setting and return the pan for 2-3 minutes, or until the cheese is bubbly and mahogany-colored.
