- ¼ cup grated Parmesan cheese
Instructions:
- Preheat your oven to 425°F (220°C). Place the rimmed baking sheet inside the oven while it preheats to ensure the zucchini sears immediately upon contact.
- In a large mixing bowl, combine the zucchini slices, olive oil, salt, pepper, and garlic powder. Toss thoroughly until every slice is glossy and evenly coated.
- Carefully remove the hot baking sheet from the oven. Spread the zucchini in a single layer, ensuring they aren't touching, and roast for 12-15 minutes.
- Remove the pan and sprinkle the grated Parmesan evenly over the slices. Turn the oven to the Broil setting and return the pan for 2-3 minutes, or until the cheese is bubbly and mahogany-colored.
