Ingredients:

  • 2 medium zucchini (about 1 lb / 450g total), sliced into ½-inch thick rounds
  • 2 tablespoons olive oil (extra virgin recommended)
  • 2 cloves garlic, minced
  • ½ teaspoon dried oregano
  • ¼ teaspoon red pepper flakes (optional)
  • Salt and freshly ground black pepper, to taste
  • ¼ cup grated Parmesan cheese (about 1 oz / 30g)
  • 1 tablespoon fresh parsley, chopped (for garnish)

Instructions:

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper (optional).
  2. In a large bowl, combine the sliced zucchini, olive oil, minced garlic, oregano, and red pepper flakes (if using). Season generously with salt and pepper. Toss well to coat.
  3. Spread the zucchini slices in a single layer on the prepared baking sheet.
  4. Roast for 15 minutes, then flip the zucchini slices.
  5. Sprinkle the grated Parmesan cheese over the zucchini slices.
  6. Roast for another 5 minutes, or until the zucchini is tender and the Parmesan cheese is melted and lightly golden brown.
  7. Garnish with fresh chopped parsley. Serve immediately.
