Ingredients:
- 2 medium zucchini (about 1 lb / 450g total), sliced into ½-inch thick rounds
- 2 tablespoons olive oil (extra virgin recommended)
- 2 cloves garlic, minced
- ½ teaspoon dried oregano
- ¼ teaspoon red pepper flakes (optional)
- Salt and freshly ground black pepper, to taste
- ¼ cup grated Parmesan cheese (about 1 oz / 30g)
- 1 tablespoon fresh parsley, chopped (for garnish)
Instructions:
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper (optional).
- In a large bowl, combine the sliced zucchini, olive oil, minced garlic, oregano, and red pepper flakes (if using). Season generously with salt and pepper. Toss well to coat.
- Spread the zucchini slices in a single layer on the prepared baking sheet.
- Roast for 15 minutes, then flip the zucchini slices.
- Sprinkle the grated Parmesan cheese over the zucchini slices.
- Roast for another 5 minutes, or until the zucchini is tender and the Parmesan cheese is melted and lightly golden brown.
- Garnish with fresh chopped parsley. Serve immediately.
