Ingredients:
- 1/3 cup (55g) chia seeds
- 1 1/2 cups (355ml) unsweetened almond milk
- 2 tbsp (30ml) pure maple syrup
- 1 tsp (5ml) vanilla extract
- 1/8 tsp (0.75g) fine sea salt
- 1 cup (150g) fresh mixed berries
- 1 tbsp (15g) sliced almonds
- 1/4 cup (60g) Greek yogurt
Instructions:
- In a medium mixing bowl or a large jar, combine the chia seeds, almond milk, maple syrup, vanilla extract, and salt. Whisk vigorously for about 60 seconds until the mixture is smooth and the seeds are evenly distributed.
- Let the mixture sit at room temperature for 10 minutes. After 10 minutes, stir the mixture again with a fork to break up any seeds that have gathered in clumps.
- Divide the mixture evenly between three 8 oz mason jars. Seal the lids tightly and refrigerate for at least 4 hours, or overnight for the best texture.
- Before serving, top each jar with mixed berries, sliced almonds, and an optional layer of Greek yogurt.
