Ingredients:
- 2 tablespoons (30ml) extra virgin olive oil
- 2 cloves garlic, minced
- 1 (28 ounce/794g) bottle smooth tomato passata
- 1/2 teaspoon dried oregano
- 1/4 teaspoon red pepper flakes (optional)
- 1/2 teaspoon salt, or to taste
- 1/4 teaspoon black pepper, or to taste
- Fresh basil leaves, for garnish
Instructions:
- Heat olive oil in a large saucepan over medium heat. Add minced garlic and sauté for 1-2 minutes, until fragrant but not browned.
- Pour the passata into the saucepan.
- Add oregano, red pepper flakes (if using), salt, and pepper.
- Bring the sauce to a simmer, then reduce heat to low. Simmer for 30 minutes, stirring occasionally, until the sauce has thickened slightly and the flavors have melded.
- Taste the sauce and adjust seasoning as needed. Add more salt, pepper, or red pepper flakes to your liking.
- Serve hot, garnished with fresh basil leaves.
