Ingredients:

  • 2 tablespoons (30ml) extra virgin olive oil
  • 2 cloves garlic, minced
  • 1 (28 ounce/794g) bottle smooth tomato passata
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon red pepper flakes (optional)
  • 1/2 teaspoon salt, or to taste
  • 1/4 teaspoon black pepper, or to taste
  • Fresh basil leaves, for garnish

Instructions:

  1. Heat olive oil in a large saucepan over medium heat. Add minced garlic and sauté for 1-2 minutes, until fragrant but not browned.
  2. Pour the passata into the saucepan.
  3. Add oregano, red pepper flakes (if using), salt, and pepper.
  4. Bring the sauce to a simmer, then reduce heat to low. Simmer for 30 minutes, stirring occasionally, until the sauce has thickened slightly and the flavors have melded.
  5. Taste the sauce and adjust seasoning as needed. Add more salt, pepper, or red pepper flakes to your liking.
  6. Serve hot, garnished with fresh basil leaves.
