Ingredients:

  • 3 medium peaches (approx. 1 lb / 450g), sliced into wedges
  • 8 oz (225g) fresh mozzarella pearls or sliced
  • 1 cup (150g) cherry tomatoes, halved
  • 1/2 cup (15g) fresh basil leaves
  • 1/4 cup (60ml) balsamic glaze
  • 2 tbsp (30ml) extra virgin olive oil
  • 1 pinch flaky sea salt
  • 1 pinch freshly cracked black pepper

Instructions:

  1. Slice the peaches into uniform wedges and halve the cherry tomatoes lengthwise. If using a large mozzarella ball, slice it into rounds that mirror the size of the peach wedges.
  2. On a large platter, alternate the peach wedges and mozzarella slices in an overlapping circular pattern.
  3. Tuck the halved cherry tomatoes and fresh basil leaves into the gaps between the peaches and mozzarella.
  4. Drizzle the extra virgin olive oil evenly over the top to create a glossy sheen.
  5. Apply a zig-zag drizzle of the thick balsamic glaze over the salad.
  6. Finish with a sprinkle of flaky sea salt and freshly cracked black pepper immediately before serving.
