Ingredients:
- 3 medium peaches (approx. 1 lb / 450g), sliced into wedges
- 8 oz (225g) fresh mozzarella pearls or sliced
- 1 cup (150g) cherry tomatoes, halved
- 1/2 cup (15g) fresh basil leaves
- 1/4 cup (60ml) balsamic glaze
- 2 tbsp (30ml) extra virgin olive oil
- 1 pinch flaky sea salt
- 1 pinch freshly cracked black pepper
Instructions:
- Slice the peaches into uniform wedges and halve the cherry tomatoes lengthwise. If using a large mozzarella ball, slice it into rounds that mirror the size of the peach wedges.
- On a large platter, alternate the peach wedges and mozzarella slices in an overlapping circular pattern.
- Tuck the halved cherry tomatoes and fresh basil leaves into the gaps between the peaches and mozzarella.
- Drizzle the extra virgin olive oil evenly over the top to create a glossy sheen.
- Apply a zig-zag drizzle of the thick balsamic glaze over the salad.
- Finish with a sprinkle of flaky sea salt and freshly cracked black pepper immediately before serving.
