Ingredients:
- 1/4 cup chia seeds
- 1 cup unsweetened almond milk
- 3 tbsp creamy peanut butter
- 1 tbsp maple syrup
- 1/2 tsp vanilla extract
- 1 pinch salt
- 1/4 cup Greek yogurt
- 1 medium banana, sliced
- 1 tbsp roasted peanuts, crushed
- 1/4 cup fresh berries
Instructions:
- In a mixing bowl or directly in jars, combine the almond milk, peanut butter, maple syrup, vanilla extract, and salt. Whisk vigorously until the peanut butter is fully incorporated and the liquid is smooth.
- If using Greek yogurt, whisk it into the liquid base until the mixture is creamy.
- Pour in the chia seeds and stir immediately. Let the mixture sit for 5 minutes on the counter, then give it one more thorough stir to prevent the seeds from clumping.
- Cover the jars with a lid or beeswax wrap and refrigerate for at least 4 hours, or overnight for thickest consistency.
- Just before serving, stir the pudding briefly and top with sliced bananas, crushed peanuts, and berries.
