Ingredients:
- 2 cups (200g) Rolled Oats (not instant)
- 1 cup (100g) Vegan Protein Powder (Vanilla or Unflavored)
- ½ cup (60g) Vegan Dark Chocolate Chips
- ¼ cup (30g) Chopped Walnuts (optional)
- 1/4 teaspoon Sea Salt
- ½ cup (120ml) Peanut Butter (smooth or crunchy)
- ⅓ cup (80ml) Maple Syrup
- ¼ cup (60ml) Coconut Oil, melted
- 2 Tablespoons (30ml) Plant-Based Milk (Almond, Soy, or Oat)
- 1 teaspoon Vanilla Extract
Instructions:
- Line an 8x8 inch baking pan with parchment paper, leaving an overhang.
- In a large bowl, combine rolled oats, protein powder, chocolate chips, walnuts (if using), and salt.
- In a separate bowl, combine peanut butter, maple syrup, melted coconut oil, plant-based milk, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and mix until evenly coated.
- Transfer the mixture to the prepared pan and press firmly and evenly.
- Cover and refrigerate for at least 30 minutes to firm up.
- Lift the bars out and cut into 8 equal-sized bars. Enjoy your Vegan Protein Bars!
