Ingredients:

  • 2 cups (200g) Rolled Oats (not instant)
  • 1 cup (100g) Vegan Protein Powder (Vanilla or Unflavored)
  • ½ cup (60g) Vegan Dark Chocolate Chips
  • ¼ cup (30g) Chopped Walnuts (optional)
  • 1/4 teaspoon Sea Salt
  • ½ cup (120ml) Peanut Butter (smooth or crunchy)
  • ⅓ cup (80ml) Maple Syrup
  • ¼ cup (60ml) Coconut Oil, melted
  • 2 Tablespoons (30ml) Plant-Based Milk (Almond, Soy, or Oat)
  • 1 teaspoon Vanilla Extract

Instructions:

  1. Line an 8x8 inch baking pan with parchment paper, leaving an overhang.
  2. In a large bowl, combine rolled oats, protein powder, chocolate chips, walnuts (if using), and salt.
  3. In a separate bowl, combine peanut butter, maple syrup, melted coconut oil, plant-based milk, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and mix until evenly coated.
  5. Transfer the mixture to the prepared pan and press firmly and evenly.
  6. Cover and refrigerate for at least 30 minutes to firm up.
  7. Lift the bars out and cut into 8 equal-sized bars. Enjoy your Vegan Protein Bars!
