Ingredients:

  • 1 cup creamy peanut butter (preferably unsweetened)
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 cup rolled oats
  • 1 cup all-purpose flour
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup chocolate chips or chopped nuts (optional)

Instructions:

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine peanut butter, granulated sugar, brown sugar, egg, and vanilla. Mix well until smooth.
  3. In a separate bowl, whisk together oats, flour, baking soda, and salt until combined.
  4. Gradually add the dry mixture to the wet mixture, mixing until just combined. If using, fold in chocolate chips or nuts.
  5. Using a cookie scoop or tablespoon, drop rounded portions of dough onto the prepared baking sheet, spaced about 2 inches apart.
  6. Bake in the preheated oven for 12-15 minutes, or until the edges are golden and the centers are set.
  7. Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
