Ingredients:
- 1 cup creamy peanut butter (preferably unsweetened)
- 1/2 cup granulated sugar
- 1/2 cup brown sugar, packed
- 1 large egg
- 1 tsp vanilla extract
- 1 cup rolled oats
- 1 cup all-purpose flour
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 cup chocolate chips or chopped nuts (optional)
Instructions:
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, combine peanut butter, granulated sugar, brown sugar, egg, and vanilla. Mix well until smooth.
- In a separate bowl, whisk together oats, flour, baking soda, and salt until combined.
- Gradually add the dry mixture to the wet mixture, mixing until just combined. If using, fold in chocolate chips or nuts.
- Using a cookie scoop or tablespoon, drop rounded portions of dough onto the prepared baking sheet, spaced about 2 inches apart.
- Bake in the preheated oven for 12-15 minutes, or until the edges are golden and the centers are set.
- Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
