Ingredients:
- 1 cup creamy peanut butter
- 1 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- ½ teaspoon baking soda
- ¼ teaspoon salt
- Coarse sea salt (for sprinkling)
- - Chocolate chips or melted chocolate (for drizzling)
Instructions:
- Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper or silicone mats.
- In a mixing bowl, combine the creamy peanut butter and granulated sugar until smooth. Add in the egg, vanilla extract, baking soda, and salt. Mix until well combined; the dough will be thick.
- Using a tablespoon or cookie scoop, portion out balls of dough and place them onto the prepared baking sheets, spacing them about 2 inches apart. Flatten each ball slightly with a fork to create a crisscross pattern on top.
- Bake in the preheated oven for about 10–12 minutes or until lightly golden around the edges but still soft in the center. Be careful not to overbake!
- Remove from oven and let cookies cool on the baking sheet for about 5 minutes before transferring them to wire racks to cool completely.
