Ingredients:

  • 1 cup creamy peanut butter
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • Coarse sea salt (for sprinkling)
  • - Chocolate chips or melted chocolate (for drizzling)

Instructions:

  1. Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper or silicone mats.
  2. In a mixing bowl, combine the creamy peanut butter and granulated sugar until smooth. Add in the egg, vanilla extract, baking soda, and salt. Mix until well combined; the dough will be thick.
  3. Using a tablespoon or cookie scoop, portion out balls of dough and place them onto the prepared baking sheets, spacing them about 2 inches apart. Flatten each ball slightly with a fork to create a crisscross pattern on top.
  4. Bake in the preheated oven for about 10–12 minutes or until lightly golden around the edges but still soft in the center. Be careful not to overbake!
  5. Remove from oven and let cookies cool on the baking sheet for about 5 minutes before transferring them to wire racks to cool completely.
