Ingredients:

  • 1 cup (225g) unsalted butter, melted
  • 1 cup (250g) creamy peanut butter
  • 1 cup (200g) brown sugar, packed
  • 1 large egg
  • 1 tsp (5ml) vanilla extract
  • 2 cups (250g) all-purpose flour
  • 1/2 tsp (3g) baking soda
  • 1/4 tsp (1.5g) salt
  • 1 1/2 cups (255g) semi-sweet chocolate chips
  • 1 cup (100g) graham cracker crumbs
  • 1 1/2 cups (120g) mini marshmallows

Instructions:

  1. Whisk together the melted butter, peanut butter, and brown sugar in a large bowl until the mixture is smooth and velvety.
  2. Stir in the egg and vanilla extract until fully incorporated.
  3. Gently mix in the flour, baking soda, and salt, stopping as soon as no streaks of flour remain.
  4. Press the dough evenly into a parchment-lined 9x9 inch pan. Bake at 350°F (175°C) for 12-15 minutes until the edges are mahogany-colored.
  5. Remove the pan from the oven and immediately sprinkle semi-sweet chocolate chips evenly over the hot crust; let sit for 2 minutes to soften.
  6. Sprinkle graham cracker crumbs over the chocolate, pressing very lightly.
  7. Distribute mini marshmallows evenly across the top, covering the surface completely.
  8. Return the pan to the oven for 5-8 minutes until marshmallows are toasted.
  9. Allow the bars to cool and set for 2 hours before slicing into squares.
