Ingredients:
- 1 cup (225g) unsalted butter, melted
- 1 cup (250g) creamy peanut butter
- 1 cup (200g) brown sugar, packed
- 1 large egg
- 1 tsp (5ml) vanilla extract
- 2 cups (250g) all-purpose flour
- 1/2 tsp (3g) baking soda
- 1/4 tsp (1.5g) salt
- 1 1/2 cups (255g) semi-sweet chocolate chips
- 1 cup (100g) graham cracker crumbs
- 1 1/2 cups (120g) mini marshmallows
Instructions:
- Whisk together the melted butter, peanut butter, and brown sugar in a large bowl until the mixture is smooth and velvety.
- Stir in the egg and vanilla extract until fully incorporated.
- Gently mix in the flour, baking soda, and salt, stopping as soon as no streaks of flour remain.
- Press the dough evenly into a parchment-lined 9x9 inch pan. Bake at 350°F (175°C) for 12-15 minutes until the edges are mahogany-colored.
- Remove the pan from the oven and immediately sprinkle semi-sweet chocolate chips evenly over the hot crust; let sit for 2 minutes to soften.
- Sprinkle graham cracker crumbs over the chocolate, pressing very lightly.
- Distribute mini marshmallows evenly across the top, covering the surface completely.
- Return the pan to the oven for 5-8 minutes until marshmallows are toasted.
- Allow the bars to cool and set for 2 hours before slicing into squares.
