Ingredients:

  • 2 tbsp extra virgin olive oil
  • 1 tbsp fresh lemon juice
  • 2 cloves garlic, minced
  • 1/2 tsp kosher salt
  • 1/4 tsp cracked black pepper
  • 1/8 tsp red pepper flakes
  • 3 medium zucchini, sliced into 1/4-inch planks
  • 1 tbsp fresh basil, chiffonade
  • 1 tsp lemon zest

Instructions:

  1. In a large mixing bowl, whisk together the olive oil, lemon juice, minced garlic, salt, pepper, and red pepper flakes.
  2. Toss in the zucchini planks, coating them thoroughly. Ensure they do not marinate for more than 15 minutes to maintain texture.
  3. Preheat your grill to medium-high (approximately 400°F / 200°C).
  4. Place the zucchini slices directly on the grates or in a grill basket. Grill for 3-4 minutes per side until deep mahogany char marks appear and the vegetable is fork-tender.
  5. Transfer the grilled zucchini to a platter and immediately scatter fresh basil and lemon zest over the top while steaming.
