Ingredients:
- 2 tbsp extra virgin olive oil
- 1 tbsp fresh lemon juice
- 2 cloves garlic, minced
- 1/2 tsp kosher salt
- 1/4 tsp cracked black pepper
- 1/8 tsp red pepper flakes
- 3 medium zucchini, sliced into 1/4-inch planks
- 1 tbsp fresh basil, chiffonade
- 1 tsp lemon zest
Instructions:
- In a large mixing bowl, whisk together the olive oil, lemon juice, minced garlic, salt, pepper, and red pepper flakes.
- Toss in the zucchini planks, coating them thoroughly. Ensure they do not marinate for more than 15 minutes to maintain texture.
- Preheat your grill to medium-high (approximately 400°F / 200°C).
- Place the zucchini slices directly on the grates or in a grill basket. Grill for 3-4 minutes per side until deep mahogany char marks appear and the vegetable is fork-tender.
- Transfer the grilled zucchini to a platter and immediately scatter fresh basil and lemon zest over the top while steaming.
