Ingredients:
- 4 (6-ounce) skin-on salmon fillets (170g each)
- 2 tablespoons olive oil (30ml)
- Salt and black pepper, to taste
- Zest of 1 large lemon
- 2 tablespoons fresh lemon juice (30ml)
- 2 tablespoons fresh dill, chopped (or 1 tablespoon dried dill) (30g)
- 1 tablespoon honey (15ml)
- 1 clove garlic, minced
- Lemon wedges for garnish
- Extra dill sprigs for garnish
Instructions:
- Preheat the oven to 400°F (200°C).
- Line a baking sheet with parchment paper or lightly grease it.
- Pat the salmon fillets dry with paper towels and place on the baking sheet, skin side down. Drizzle with olive oil, and season with salt and pepper.
- In a small mixing bowl, whisk together lemon zest, lemon juice, dill, honey, and minced garlic.
- Brush the lemon-dill glaze generously over each salmon fillet.
- Bake in the preheated oven for 15-20 minutes, or until the salmon is cooked through (internal temperature should reach 145°F or 63°C).
- Remove from the oven, garnish with lemon wedges and dill sprigs, and serve hot with your choice of sides.
