Ingredients:

  • 4 (6-ounce) skin-on salmon fillets (170g each)
  • 2 tablespoons olive oil (30ml)
  • Salt and black pepper, to taste
  • Zest of 1 large lemon
  • 2 tablespoons fresh lemon juice (30ml)
  • 2 tablespoons fresh dill, chopped (or 1 tablespoon dried dill) (30g)
  • 1 tablespoon honey (15ml)
  • 1 clove garlic, minced
  • Lemon wedges for garnish
  • Extra dill sprigs for garnish

Instructions:

  1. Preheat the oven to 400°F (200°C).
  2. Line a baking sheet with parchment paper or lightly grease it.
  3. Pat the salmon fillets dry with paper towels and place on the baking sheet, skin side down. Drizzle with olive oil, and season with salt and pepper.
  4. In a small mixing bowl, whisk together lemon zest, lemon juice, dill, honey, and minced garlic.
  5. Brush the lemon-dill glaze generously over each salmon fillet.
  6. Bake in the preheated oven for 15-20 minutes, or until the salmon is cooked through (internal temperature should reach 145°F or 63°C).
  7. Remove from the oven, garnish with lemon wedges and dill sprigs, and serve hot with your choice of sides.
