Ingredients:
- 1 large green cabbage (about 2 pounds or 900 grams)
- 2 tablespoons olive oil (30 ml)
- 1 teaspoon salt (5 grams)
- ½ teaspoon black pepper (2 grams)
- ¼ cup unsalted butter, softened (60 grams)
- 2 cloves garlic, minced
- 1 tablespoon fresh parsley, finely chopped (15 grams)
- 1 teaspoon fresh thyme leaves (5 grams)
- ½ teaspoon smoked paprika (2 grams)
- Optional: Zest of 1 lemon for brightness
Instructions:
- Remove any outer leaves and cut the cabbage into 1-inch thick slices.
- Brush both sides of each cabbage steak with olive oil, and sprinkle with salt and pepper.
- In a mixing bowl, combine softened butter, minced garlic, parsley, thyme, paprika, and lemon zest. Mix until well combined.
- Heat the grill or griddle over medium-high heat until hot.
- Place the cabbage steaks on the grill and cook for 5-6 minutes on each side, until charred and tender.
- During the last few minutes of cooking, use a basting brush to coat the tops with garlic herb butter.
- Remove from the grill and serve immediately, garnished with extra herbs if desired.
