Ingredients:
- 4 boneless, skinless chicken breasts (about 6 oz/170 g each)
- 1/4 cup (60 ml) olive oil
- 3 tablespoons (45 ml) lemon juice (about 1 lemon)
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- Additional olive oil for brushing
- Fresh herbs for garnish (optional, such as parsley or cilantro)
Instructions:
- Combine olive oil, lemon juice, garlic, oregano, salt, and pepper in a mixing bowl.
- Whisk until fully blended.
- Place chicken breasts in a resealable plastic bag or dish. Pour marinade over chicken, seal or cover, and refrigerate for 30 minutes.
- Preheat your grill to medium-high heat (about 375°F/190°C).
- Remove the chicken from the marinade and discard the leftover marinade. Lightly brush chicken with olive oil.
- Place chicken breasts on the grill. Cook for 6-8 minutes on one side.
- Flip and grill for an additional 6-8 minutes, or until a meat thermometer reads 165°F (75°C).
- Remove chicken from the grill, let it rest for 5 minutes. Garnish with fresh herbs and serve hot.
