Ingredients:
- 20 oz (567g) Canned Pineapple Tidbits, drained well
- 1 cup (227g) Granulated Sugar
- ¼ cup (30g) All-Purpose Flour
- 1 cup (236ml) Shredded Cheddar Cheese, sharp preferred
- ½ cup (113g) Unsalted Butter, melted
- 1 sleeve (about 30 crackers, 135g) Ritz Crackers, crushed
Instructions:
- Preheat oven to 350°F (175°C).
- In a large mixing bowl, combine the drained pineapple tidbits, granulated sugar, and all-purpose flour. Mix well to coat the pineapple.
- Gently stir in the shredded cheddar cheese until evenly distributed.
- In a separate bowl, combine the crushed Ritz crackers and melted butter. Mix until the crackers are evenly coated.
- Pour the pineapple mixture into the prepared 9x13 inch baking dish. Sprinkle the cracker topping evenly over the pineapple mixture.
- Bake in the preheated oven for 30 minutes, or until the topping is golden brown and the casserole is bubbly.
- Let the pineapple casserole cool for a few minutes before serving.
