Ingredients:

  • 20 oz (567g) Canned Pineapple Tidbits, drained well
  • 1 cup (227g) Granulated Sugar
  • ¼ cup (30g) All-Purpose Flour
  • 1 cup (236ml) Shredded Cheddar Cheese, sharp preferred
  • ½ cup (113g) Unsalted Butter, melted
  • 1 sleeve (about 30 crackers, 135g) Ritz Crackers, crushed

Instructions:

  1. Preheat oven to 350°F (175°C).
  2. In a large mixing bowl, combine the drained pineapple tidbits, granulated sugar, and all-purpose flour. Mix well to coat the pineapple.
  3. Gently stir in the shredded cheddar cheese until evenly distributed.
  4. In a separate bowl, combine the crushed Ritz crackers and melted butter. Mix until the crackers are evenly coated.
  5. Pour the pineapple mixture into the prepared 9x13 inch baking dish. Sprinkle the cracker topping evenly over the pineapple mixture.
  6. Bake in the preheated oven for 30 minutes, or until the topping is golden brown and the casserole is bubbly.
  7. Let the pineapple casserole cool for a few minutes before serving.
