Ingredients:
- 2 cups all-purpose flour

- 1 tsp ground cinnamon
- ½ tsp ground cloves
- ½ tsp salt
- ½ cup unsalted butter, softened
- ¾ cup granulated sugar
- 1 large egg
- 1 tsp vanilla extract
- 1 cup shredded zucchini, squeezed dry
- 1 cup semi-sweet chocolate chips
- ½ cup chopped walnuts
Instructions:
- Pulse zucchini in a food processor for 5 seconds, then place shreds in a clean kitchen towel and squeeze firmly to remove excess water.
- Whisk together flour, baking soda, cinnamon, cloves, and salt in a medium mixing bowl.
- In a large bowl, beat softened butter and granulated sugar for 2–3 minutes using an electric mixer until pale and creamy.
- Incorporate the egg and vanilla extract into the butter mixture, then fold in the squeezed zucchini.
- Gradually stir the dry ingredients into the wet mixture until just combined, being careful not to overmix.
- Fold in the semi-sweet chocolate chips and chopped walnuts.
- Scoop rounded tablespoons of dough onto baking sheets lined with parchment paper.
- Bake at 350°F (175°C) for 10 minutes or until the edges are set and the tops are slightly matte.
