Ingredients:

  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp ground cinnamon
  • ½ tsp ground cloves
  • ½ tsp salt
  • ½ cup unsalted butter, softened
  • ¾ cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 cup shredded zucchini, squeezed dry
  • 1 cup semi-sweet chocolate chips
  • ½ cup chopped walnuts

Instructions:

  1. Pulse zucchini in a food processor for 5 seconds, then place shreds in a clean kitchen towel and squeeze firmly to remove excess water.
  2. Whisk together flour, baking soda, cinnamon, cloves, and salt in a medium mixing bowl.
  3. In a large bowl, beat softened butter and granulated sugar for 2–3 minutes using an electric mixer until pale and creamy.
  4. Incorporate the egg and vanilla extract into the butter mixture, then fold in the squeezed zucchini.
  5. Gradually stir the dry ingredients into the wet mixture until just combined, being careful not to overmix.
  6. Fold in the semi-sweet chocolate chips and chopped walnuts.
  7. Scoop rounded tablespoons of dough onto baking sheets lined with parchment paper.
  8. Bake at 350°F (175°C) for 10 minutes or until the edges are set and the tops are slightly matte.
