Ingredients:
- 4 cups mini marshmallows
- 3 tablespoons unsalted butter
- 1 teaspoon vanilla extract
- 6 cups crispy rice cereal
- 1 cup shelled roasted pistachios, roughly chopped
- Additional chopped pistachios for topping
- Melted white chocolate for drizzling (optional)
Instructions:
- Line the baking dish with parchment paper for easy removal (optional).
- In a large saucepan, melt the butter over low heat.
- Once butter is melted, add mini marshmallows. Stir until fully melted and smooth.
- Stir in vanilla extract once the marshmallows have melted.
- Remove from heat and immediately fold in crispy rice cereal and chopped pistachios. Mix until well coated.
- Pour the mixture into the prepared baking dish, pressing down evenly with a spatula or your hands.
- Let the treats cool at room temperature for about 15 minutes until set.
- Once cooled, cut into squares and, if desired, drizzle with melted white chocolate and top with additional chopped pistachios.
