Ingredients:

  • 4 cups mini marshmallows
  • 3 tablespoons unsalted butter
  • 1 teaspoon vanilla extract
  • 6 cups crispy rice cereal
  • 1 cup shelled roasted pistachios, roughly chopped
  • Additional chopped pistachios for topping
  • Melted white chocolate for drizzling (optional)

Instructions:

  1. Line the baking dish with parchment paper for easy removal (optional).
  2. In a large saucepan, melt the butter over low heat.
  3. Once butter is melted, add mini marshmallows. Stir until fully melted and smooth.
  4. Stir in vanilla extract once the marshmallows have melted.
  5. Remove from heat and immediately fold in crispy rice cereal and chopped pistachios. Mix until well coated.
  6. Pour the mixture into the prepared baking dish, pressing down evenly with a spatula or your hands.
  7. Let the treats cool at room temperature for about 15 minutes until set.
  8. Once cooled, cut into squares and, if desired, drizzle with melted white chocolate and top with additional chopped pistachios.
