Ingredients:

  • 1 cup (240ml) water or unsweetened almond milk
  • 1 cup (85g) chopped kale, stems removed
  • 1/2 cup (75g) frozen mango chunks
  • 1/2 cup (80g) frozen pineapple chunks
  • 1/2 medium (55g) banana, frozen or fresh
  • 1 tablespoon (15ml) lime juice
  • 1 teaspoon (5ml) chia seeds (optional)
  • Optional: 1/4 inch (5g) fresh ginger root, peeled

Instructions:

  1. Wash the kale thoroughly. Remove the tough stems and chop the leaves into smaller pieces.
  2. Add the water or almond milk to the blender first. Then, add the kale, frozen mango, frozen pineapple, banana, lime juice, and chia seeds (if using). Add ginger if using.
  3. Blend on high speed until completely smooth, about 30-60 seconds. If the smoothie is too thick, add a little more water or almond milk, one tablespoon at a time, until you reach your desired consistency.
  4. Taste the smoothie and adjust as needed. If it's not sweet enough, add a little more banana or a touch of honey or maple syrup (agave nectar for vegan). If it needs more zing, add a squeeze more lime.
  5. Pour into a glass and enjoy immediately.
