Ingredients:
- 1 cup (240ml) water or unsweetened almond milk
- 1 cup (85g) chopped kale, stems removed
- 1/2 cup (75g) frozen mango chunks
- 1/2 cup (80g) frozen pineapple chunks
- 1/2 medium (55g) banana, frozen or fresh
- 1 tablespoon (15ml) lime juice
- 1 teaspoon (5ml) chia seeds (optional)
- Optional: 1/4 inch (5g) fresh ginger root, peeled
Instructions:
- Wash the kale thoroughly. Remove the tough stems and chop the leaves into smaller pieces.
- Add the water or almond milk to the blender first. Then, add the kale, frozen mango, frozen pineapple, banana, lime juice, and chia seeds (if using). Add ginger if using.
- Blend on high speed until completely smooth, about 30-60 seconds. If the smoothie is too thick, add a little more water or almond milk, one tablespoon at a time, until you reach your desired consistency.
- Taste the smoothie and adjust as needed. If it's not sweet enough, add a little more banana or a touch of honey or maple syrup (agave nectar for vegan). If it needs more zing, add a squeeze more lime.
- Pour into a glass and enjoy immediately.
