Ingredients:

  • 2 lbs (900g) chicken wings, whole or split
  • 1 tablespoon (15g) olive oil
  • ½ cup (60g) all-purpose flour
  • 1 teaspoon (5g) baking powder
  • 1 teaspoon (5g) garlic powder
  • 1 teaspoon (5g) onion powder
  • 1 teaspoon (5g) smoked paprika
  • ½ teaspoon (2.5g) cayenne pepper (adjust for heat)
  • 1 teaspoon (5g) salt
  • ½ teaspoon (2.5g) black pepper

Instructions:

  1. Preheat the oven to 425°F (220°C).
  2. Pat chicken wings dry with paper towels to remove excess moisture.
  3. Place wings in a large bowl and drizzle with olive oil; toss to coat evenly.
  4. For the powder coat, in a separate bowl, combine the flour, baking powder, garlic powder, onion powder, smoked paprika, cayenne, salt, and black pepper.
  5. Gradually sprinkle the powder coat mixture over the wings and toss until evenly coated.
  6. Arrange the coated wings on a wire rack over a baking sheet, ensuring they are not touching.
  7. Bake in the preheated oven for 40 minutes, turning halfway through, until crispy and golden brown.
  8. (Optional) For extra crispiness, broil for an additional 2-3 minutes at the end.
