Ingredients:
- 2 lbs (900g) chicken wings, whole or split
- 1 tablespoon (15g) olive oil
- ½ cup (60g) all-purpose flour
- 1 teaspoon (5g) baking powder
- 1 teaspoon (5g) garlic powder
- 1 teaspoon (5g) onion powder
- 1 teaspoon (5g) smoked paprika
- ½ teaspoon (2.5g) cayenne pepper (adjust for heat)
- 1 teaspoon (5g) salt
- ½ teaspoon (2.5g) black pepper
Instructions:
- Preheat the oven to 425°F (220°C).
- Pat chicken wings dry with paper towels to remove excess moisture.
- Place wings in a large bowl and drizzle with olive oil; toss to coat evenly.
- For the powder coat, in a separate bowl, combine the flour, baking powder, garlic powder, onion powder, smoked paprika, cayenne, salt, and black pepper.
- Gradually sprinkle the powder coat mixture over the wings and toss until evenly coated.
- Arrange the coated wings on a wire rack over a baking sheet, ensuring they are not touching.
- Bake in the preheated oven for 40 minutes, turning halfway through, until crispy and golden brown.
- (Optional) For extra crispiness, broil for an additional 2-3 minutes at the end.
