Ingredients:

  • ounces Sharp Cheddar Cheese, freshly grated
  • ounces Monterey Jack or Gruyère Cheese, freshly grated
  • ounces Cream Cheese, full-fat, softened to room temperature
  • /4 cup Mayonnaise, full-fat
  • /2 cup Pimento Peppers, jarred, thoroughly drained and roughly chopped
  • teaspoon Worcestershire Sauce
  • /2 teaspoon Onion Powder
  • /4 teaspoon Garlic Powder
  • Pinch of Cayenne Pepper (to taste)
  • /4 teaspoon freshly ground Black Pepper
  • Salt, to taste

Instructions:

  1. Grate the cheddar and Monterey Jack/Gruyère cheeses finely. Set aside.
  2. In the mixing bowl, combine the softened cream cheese and mayonnaise. Beat until completely smooth and lump-free using a spatula or electric mixer on low speed.
  3. Mix in the Worcestershire sauce, onion powder, garlic powder, cayenne, and black pepper into the creamed base until evenly distributed.
  4. Gently fold in the grated cheeses until they are just combined. Avoid overmixing to maintain a light texture.
  5. Gently fold in the chopped, drained pimentos, ensuring even distribution.
  6. Taste the mixture and adjust seasoning if necessary, adding a small pinch of salt only if needed.
  7. Transfer the spread to an airtight container, pressing plastic wrap directly onto the surface. Refrigerate for at least 30 minutes to allow the flavors to marry.
  8. For optimal spreadability, bring the Pimento Cheese Spread out of the refrigerator about 10 minutes before serving.
