Ingredients:
- ounces Sharp Cheddar Cheese, freshly grated
- ounces Monterey Jack or Gruyère Cheese, freshly grated
- ounces Cream Cheese, full-fat, softened to room temperature
- /4 cup Mayonnaise, full-fat
- /2 cup Pimento Peppers, jarred, thoroughly drained and roughly chopped
- teaspoon Worcestershire Sauce
- /2 teaspoon Onion Powder
- /4 teaspoon Garlic Powder
- Pinch of Cayenne Pepper (to taste)
- /4 teaspoon freshly ground Black Pepper
- Salt, to taste
Instructions:
- Grate the cheddar and Monterey Jack/Gruyère cheeses finely. Set aside.
- In the mixing bowl, combine the softened cream cheese and mayonnaise. Beat until completely smooth and lump-free using a spatula or electric mixer on low speed.
- Mix in the Worcestershire sauce, onion powder, garlic powder, cayenne, and black pepper into the creamed base until evenly distributed.
- Gently fold in the grated cheeses until they are just combined. Avoid overmixing to maintain a light texture.
- Gently fold in the chopped, drained pimentos, ensuring even distribution.
- Taste the mixture and adjust seasoning if necessary, adding a small pinch of salt only if needed.
- Transfer the spread to an airtight container, pressing plastic wrap directly onto the surface. Refrigerate for at least 30 minutes to allow the flavors to marry.
- For optimal spreadability, bring the Pimento Cheese Spread out of the refrigerator about 10 minutes before serving.
