Ingredients:
- 1 cup (245g) pumpkin puree
- 1/2 cup (120ml) maple syrup
- 1 large (50g) egg
- 1/4 cup (60ml) coconut oil
- 1 tsp (5ml) vanilla extract
- 1 1/2 cups (190g) white whole wheat flour
- 1 tsp (5g) baking soda
- 1/2 tsp (2.5g) baking powder
- 1 tbsp (8g) pumpkin pie spice
- 1/2 tsp (3g) fine sea salt
- 8 oz (225g) low-fat cream cheese
- 4 tbsp (55g) unsalted butter
- 2 cups (240g) powdered sugar
- 1 tsp (5ml) vanilla extract
- 1/2 tsp (2.5g) ground cinnamon
- 2 tbsp (30ml) heavy cream
Instructions:
- Preheat your oven to 350°F (175°C) and line a standard muffin tin with paper liners.
- In a large bowl, whisk together the pumpkin puree, maple syrup, egg, oil, and vanilla extract until smooth.
- Sift in the white whole wheat flour, baking soda, baking powder, pumpkin pie spice, and salt. Stir gently with a spatula until just combined.
- Distribute the batter evenly among the 12 liners, filling each about 3/4 full. Bake for 18–22 minutes or until a toothpick inserted in the center comes out clean.
- Transfer cupcakes to a wire rack and allow them to cool completely for 60 minutes.
- Beat the chilled low-fat cream cheese and softened butter together on medium-high speed until smooth.
- Gradually mix in powdered sugar, vanilla extract, and ground cinnamon. Add heavy cream one tablespoon at a time if needed for consistency.
- Pipe the frosting onto the cooled cupcakes using a piping bag.
