Ingredients:
- 2 cups (250g) all-purpose flour
- 1 tsp (5g) baking soda
- ½ tsp (3g) salt
- 1 tbsp (6g) pumpkin pie spice
- 2 tbsp (12g) instant espresso powder
- ¾ cup (150g) brown sugar, packed
- ½ cup (100g) granulated sugar
- 1 cup (245g) pumpkin puree
- ½ cup (120ml) neutral oil
- 2 large eggs
- 1 tsp (5ml) vanilla extract
- 1 cup (120g) powdered sugar
- 1 tbsp (6g) instant espresso powder
- 2 tbsp (30ml) heavy cream
- ¼ tsp (1ml) vanilla extract
Instructions:
- Preheat the oven to 350°F (175°C) and generously grease a 10-inch Bundt pan with butter or non-stick spray.
- In a large bowl, whisk together the brown sugar, granulated sugar, pumpkin puree, oil, eggs, and vanilla. Stir in the instant espresso powder until completely dissolved.
- Sift the flour, baking soda, salt, and pumpkin pie spice directly into the wet ingredients. Fold the mixture together with a spatula just until the flour streaks disappear.
- Pour the batter into the prepared pan, smooth the top, and bake for 50–55 minutes until a toothpick inserted into the center comes out clean.
- Cool the cake in the pan for 10 minutes before inverting it onto a wire rack.
- Whisk together the powdered sugar, second portion of espresso powder, heavy cream, and vanilla extract to create a glaze, then drizzle over the cooled cake.
