Ingredients:
- 2 ½ cups (315g) all-purpose flour
- 1 ½ tsp (7g) baking soda
- ½ tsp (3g) baking powder
- 1 tbsp (6g) ground cinnamon
- 1 tsp (2g) ground ginger
- ½ tsp (1g) ground nutmeg
- ½ tsp (3g) salt
- 1 cup (200g) granulated sugar
- ½ cup (115g) vegetable oil
- 3 large (150g) eggs
- 1 can (15 oz / 425g) pumpkin puree
- 1 tsp (5ml) vanilla extract
- 8 oz (225g) full-fat cream cheese
- ½ cup (115g) unsalted butter
- 4 cups (480g) powdered sugar
- 1 tsp (2g) ground cinnamon
- 1 tsp (5ml) vanilla extract
- ¼ tsp (1.5g) salt
Instructions:
- Preheat oven to 350°F (175°C) and grease two 8-inch round cake pans with parchment paper.
- In a medium bowl, whisk together flour, baking soda, baking powder, ground cinnamon, ginger, nutmeg, and salt.
- In a separate large bowl, beat granulated sugar and vegetable oil until combined, then add eggs one at a time.
- Stir in the pumpkin puree and vanilla extract.
- Slowly fold in the dry ingredients until just combined; do not overmix.
- Divide the batter evenly between the two pans and bake for 28–32 minutes, or until the center springs back when lightly pressed.
- Cool cakes in pans for 10 minutes, then transfer to a wire rack to cool completely.
- Beat cold cream cheese and softened butter on medium-high for 3 minutes until smooth.
- Mix in powdered sugar, cinnamon, vanilla, and salt until a stable, velvety frosting forms.
- Frost the cooled cake layers and let the frosting set for 1 hour before serving.
