Ingredients:

  • 6 cups Rice Krispies cereal
  • 3 tablespoons unsalted butter
  • 1 package (10 oz) mini marshmallows
  • 1/2 cup canned pumpkin puree
  • 1 teaspoon pumpkin pie spice
  • 1/2 teaspoon vanilla extract
  • Pinch of salt
  • 1/2 cup white chocolate chips (optional)
  • 1/4 teaspoon cinnamon (for dusting, optional)

Instructions:

  1. Grease the 9x13-inch baking dish with butter or line with parchment paper.
  2. In a large saucepan, melt the butter over low heat. Add mini marshmallows and stir until completely melted and smooth.
  3. Remove from heat and mix in pumpkin puree, pumpkin pie spice, vanilla extract, and a pinch of salt.
  4. Gradually fold in the Rice Krispies cereal until evenly coated with the pumpkin mixture.
  5. Pour the mixture into the prepared baking dish, pressing it down firmly to create an even layer.
  6. Allow to cool at room temperature for about 30 minutes or until set.
  7. Melt white chocolate in the microwave. Drizzle over the cooled treats and sprinkle with cinnamon, if desired.
  8. Cut into squares and enjoy your festive treats!
