Ingredients:
- 6 cups Rice Krispies cereal
- 3 tablespoons unsalted butter
- 1 package (10 oz) mini marshmallows
- 1/2 cup canned pumpkin puree
- 1 teaspoon pumpkin pie spice
- 1/2 teaspoon vanilla extract
- Pinch of salt
- 1/2 cup white chocolate chips (optional)
- 1/4 teaspoon cinnamon (for dusting, optional)
Instructions:
- Grease the 9x13-inch baking dish with butter or line with parchment paper.
- In a large saucepan, melt the butter over low heat. Add mini marshmallows and stir until completely melted and smooth.
- Remove from heat and mix in pumpkin puree, pumpkin pie spice, vanilla extract, and a pinch of salt.
- Gradually fold in the Rice Krispies cereal until evenly coated with the pumpkin mixture.
- Pour the mixture into the prepared baking dish, pressing it down firmly to create an even layer.
- Allow to cool at room temperature for about 30 minutes or until set.
- Melt white chocolate in the microwave. Drizzle over the cooled treats and sprinkle with cinnamon, if desired.
