Ingredients:
- ½ cup (100g) All-purpose flour
- ½ cup (100g) Brown sugar, packed
- 1 tsp (2g) Ground cinnamon
- 4 tbsp (57g) Cold unsalted butter, cubed
- 2 cups (250g) All-purpose flour
- 1 tsp (5g) Baking powder
- ½ tsp (3g) Baking soda
- 1 tbsp (8g) Pumpkin pie spice
- ½ tsp (3g) Salt
- ½ cup (115g) Unsalted butter, softened
- 1 cup (200g) Granulated sugar
- 2 Large eggs
- 1 cup (245g) Pumpkin purée
- ½ cup (120g) Sour cream, full fat
- 1 tsp (5ml) Vanilla extract
- 1 cup (125g) Powdered sugar
- 2 tbsp (30ml) Pure maple syrup
- 2 tbsp (30ml) Milk
- ¼ tsp (1g) Ground cinnamon
Instructions:
- Preheat your oven to 350°F (175°C). Grease your 9-inch pan and line the bottom with parchment paper.
- In a medium bowl, combine flour, brown sugar, and cinnamon. Use a fork or your fingers to rub the cold cubed butter into the mixture until it looks like coarse crumbs. Set aside.
- In a separate bowl, whisk together the flour, baking powder, baking soda, pumpkin spice, and salt.
- In the large bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Beat in the eggs one at a time, then stir in the pumpkin purée and vanilla extract.
- Alternate adding the dry flour mixture and the sour cream to the pumpkin mixture, starting and ending with flour. Mix until just combined; do not overmix.
- Pour the batter into the prepared pan and smooth the top with a spatula.
- Evenly sprinkle the streusel topping over the batter, pressing lightly.
- Bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean.
- Whisk together powdered sugar, maple syrup, milk, and cinnamon to create the glaze. Drizzle over the cooled cake.
