Ingredients:
- 4 bone-in, skin-on chicken thighs (about 1.5 lbs total)
- 1/2 cup balsamic vinegar
- 3 tablespoons olive oil
- 2 tablespoons honey or maple syrup
- 3 cloves garlic, minced
- Salt and pepper to taste
- [Remaining marinade from above (after marinating the chicken)]
- [Fresh basil leaves for garnish (optional)]
Instructions:
- - In a large bowl, whisk together the balsamic vinegar, olive oil, honey or maple syrup, minced garlic, salt, and pepper. - Add the chicken thighs to the bowl and ensure they are well coated in the marinade. Cover and refrigerate for at least 30 minutes, preferably up to 2 hours for enhanced flavor.
- Preheat your oven to 400°F (200°C).
- Heat a large oven-safe skillet over medium-high heat. Once hot, add about a tablespoon of olive oil. Remove chicken from marinade (reserve it) and place them skin-side down in the skillet. Sear for about 5-7 minutes, until golden brown.
- Flip each thigh over so that its skin-side up. Pour half of your reserved marinade over them (discard any remaining unused portion).
- Transfer skillet to preheated oven and bake for about 20-25 minutes, or until internal temperature reaches at least 165°F (75°C).
- If desired, broil on high for an additional 2-3 minutes to caramelize further. Remove from oven; allow resting for 5 minutes. Garnish with fresh basil if using before serving.
