  • 2 scoops of vanilla ice cream
  • Fresh lime or lemon wedges for garnish (optional)

Instructions:

  1. Combine Ingredients: In a small saucepan, combine the sugar and water.
  2. Heat Mixture: Place over medium heat, stirring until the sugar is fully dissolved.
  3. Add Lime: Once dissolved, add the lime zest and juice to the mixture.
  4. Simmer: Allow to simmer for about 5 minutes; remove from heat and let cool.
  5. Strain & Store: Strain out the zest if desired and store syrup in a sealed container in the refrigerator until ready to use.
  6. Choose Your Glasses: Select two tall glasses or mugs for serving.
  7. Pour Soda: Pour half a cup of your chosen Mexican soda into each glass slowly to avoid too much fizzing.
  8. Add Ice Cream: Carefully add one scoop of vanilla ice cream into each glass on top of the soda; it may fizz up!
  9. Top with More Soda: Gently pour more soda on top until filled, allowing it to mix slightly with ice cream while keeping some float effect visible.
