- 1 cup (240ml) unsweetened almond milk
- 1/4 cup (60ml) Greek yogurt
- 1 tbsp (15ml) maple syrup
- 1/2 tsp (2.5ml) vanilla extract
- 1 pinch (0.5g) sea salt
Instructions:
- In a medium bowl or directly in two mason jars, combine the chia seeds, almond milk, Greek yogurt, maple syrup, vanilla extract, and salt.
- Whisk vigorously for 60 seconds, ensuring no dry clumps of seeds are clinging to the sides of the container.
- Let the mixture sit undisturbed on the counter for 5 to 10 minutes to initiate the hydration process.
- Stir the mixture a second time with a fork, scraping the bottom and sides thoroughly to break up any seed clusters.
- Seal the jars with lids and transfer to the refrigerator.
- Chill for at least 4 hours, or ideally overnight, to achieve a cohesive, custard-like structure.
