  • 1 cup (240ml) unsweetened almond milk
  • 1/4 cup (60ml) Greek yogurt
  • 1 tbsp (15ml) maple syrup
  • 1/2 tsp (2.5ml) vanilla extract
  • 1 pinch (0.5g) sea salt

Instructions:

  1. In a medium bowl or directly in two mason jars, combine the chia seeds, almond milk, Greek yogurt, maple syrup, vanilla extract, and salt.
  2. Whisk vigorously for 60 seconds, ensuring no dry clumps of seeds are clinging to the sides of the container.
  3. Let the mixture sit undisturbed on the counter for 5 to 10 minutes to initiate the hydration process.
  4. Stir the mixture a second time with a fork, scraping the bottom and sides thoroughly to break up any seed clusters.
  5. Seal the jars with lids and transfer to the refrigerator.
  6. Chill for at least 4 hours, or ideally overnight, to achieve a cohesive, custard-like structure.
